I was a little surprised when my HelloFresh box arrived, and the food was all quite… recognizable. There was pork, there was chicken, and there was steak, but for the most part, I knew what every ingredient was. The recipes required high heats and good olive oil, but mostly, I was thrilled to discover that I wasn’t going to be eating anything very strange.
One positive, however, was that I had never been much for making sauces before. I LOVE sauces, and when I’m at a restaurant I’m the first to try any creamy concoction or vinaigrette to brighten up more dull veggies. That being said, I’ve had sauces go chunky, gunky, and all around gross before, so I just avoid making them mostly. That being said, the pan sauce and the dill cream sauce in my latest batch of meals were so easy to make, and positively perfumed the kitchen.
The above sauce, which used stock and lemon and garlic and butter to make a great sauce to layer onto pork tenderloin, was a wonderful new trick for me, and I’m realizing that making a small quantity of a simple sauce is easy, and really makes a meal look fancier than usual. Perhaps part of my new year’s resolution will include a few more sauces in my life… Yum.
